Eilish is currently the Head of Department of Biological & Pharmaceutical Science at MunsterTechnological University – Kerry Campusin Tralee.She graduated from the University of Limerick in 1999 with a Bachelor of Science in Education and completed a Masters and PhD in Science at IT Tralee. Eilish previously worked for eight years supporting food producers through management of the National Rural Food Skillnet programme and as Farm Diversification Specialist with the Rural Development Programme. Eilish completed her Nuffield study entitled“Opportunities for Farm Families in Food Production”. Her interest in food production stemmed from having grown up on a dairy farm with a successful farmhouse cheese making business making the award winning Kerry Farmhouse Cheese.
